Sauteed Spinach with Olives
serves 4
Ingredients
- 2 T olive oil
- 4 cl garlic, thin slice
- 10 C spinach
- 1/4 C black olives, pitted, halved
- 2 T lemon juice
Instructions
- Warm the garlic in the olive oil to infuse, then remove the garlic. Sauté the spinach in the olive oil until wilted.
- Toss the olives into the spinach.
- Plate, dress with lemon juice, and serve.
